Review of Solid-State Fermentation

A report from Barak Dror, sponsored by GFI Israel gives a comprehensive review of the state of technology for solid-state fermentation (SSF) and the advantages and disadvantages versus submerged fermentation. It's interesting to think about where SSF can fit within the current mix of technologies for providing alternative protein, particularly when we look at the potential uses of byproducts from conventional processing of agricultural material.
